1½ cups pure icing sugar
¾ cup almond meal
¼ cup White Wings Coconut Flour
1 tbsp poppy seeds
5 egg whites from extra large eggs
160g butter, melted
1 tbsp orange juice
2 tsp finely grated orange rind
Honey glazed orange slices
2 tbsp honey
Pre-heat oven to 180°C (160°C fan-forced). Grease with butter and dust with almond meal 8, ⅓ cup capacity friands.
Sift icing sugar into a large mixing bowl. Mix in the almond meal, coconut flour and poppy seeds.
In a separate bowl, whisk the egg whites until frothy. Stir in the butter, orange juice and rind. Add to the icing sugar mixture and mix until well combined.
Pour mixture between prepared moulds and bake for 20-25 minutes. Allow to cool for 5 minutes before removing from pans and cool completely on a cooling racks
For honey glazed orange slices, thinly slice orange, lay on a lined baking tray, drizzle with honey and bake for 30 mins at 130C fan. Top cooled friands with orange slices before serving.
